Ingredients

  1. Semolina – 2cups
  2. Chickpea flour – 1 cup
  3. Baking powder – 2 Tsp
  4. Turmeric powder – 1 Tsp
  5. Salt – to taste
  6. Sugar – a pinch
  7. Leftover vegetables (carrot, broccoli, corn, bell pepper, onion, tomato, carrot)
  8. Plain yogurt – ¼ cup
  9. Ginger/Garlic/chilly paste
  10. Oil – 2tsp
  11. Water – 4 Tsp

Method of Preparation

  1. In a bowl, mix all the ingredients
  2. Turn on the oven and set it to 350 degrees Fahrenheit
  3. Place, the cupcake molds on the tray and grease it with oil.
  4. Place the cupcake molds into the oven and bake the mixture for about 30 minutes or till the top turns brown.
  5. Now, cool it to the room temperature and pack them.

NOTE: – You can also add eggs if you wish to.

Ingredients

  1. Whole wheat (atta)- 1 cup
  2. Sugar – ½ cup
  3. Orange juice – 1cup
  4. Orange zest – 1 tsp
  5. Salt – 1 pinch
  6. Baking soda – ½ cup
  7. Baking powder- ½ cup
  8. Cornstarch – 1 Tsp
  9. Oil – ¼ cup
  10. Cherries – for garnishing

Method of Preparation

  1. In a bowl, sieve atta, cornstarch, baking soda, baking powder, the pinch of salt. Keep it aside.
  2. For the orange zest, grate the zest of one medium-sized orange and keep it aside.
  3. Preheat the oven at 180 degree Celsius, also grease the muffin mold.
  4. Now, in another bowl take ½ cup of sugar and ¼ cup oil, mix it and keep it aside.
  5. Mix 1 cup of orange juice to the sugar and oil mixture.
  6. Add this orange juice mixture to the sieved dry mixture and add the orange zest too.
  7. With the help of a wire whisk, stir it to the smooth batter with light hands.
  8. Now, pour the orange muffins to the cupcake mold. Do not overfill the mold and leave some space. ( as the muffins would become fluffy when baked)
  9. Place the muffin tray in the preheated oven, and bake it for 25-30 minutes at 180 degree Celsius. (To check, if a muffin is cooked, place a toothpick in the muffin batter if it comes clean the muffin is cooked)
  10. Now, after 25 minutes take out the muffin and let it cool. Serve it plain, or sprinkle some cocoa powder over it.

Baked Oats Methi Puri

Ingredients

  1. Oats flour – ½ cup
  2. Fenugreek leaves (dry)- 2 tsp (Kasuri methi)
  3. Black sesame seeds- 2 tsp
  4. Whole-wheat flour- 1 cup
  5. Curd- 2 Tsp
  6. Green chilly paste- ½ tsp
  7. Garlic paste- 1 tsp
  8. Oil – 2tsp
  9. Salt- to taste

Method of Preparation

  1. In a bowl, combine all the ingredients and knead it into a dough.
  2. Divide the dough into equal proportion and roll out each proportion into 75 mm circle.
  3. Prick the rolled out puris with the help of a fork
  4. Put the puris on a baking tray and bake them at preheated oven at 200 degree Celsius for about 20-25 minutes. Turn them once, in 10 minutes till they turn crisp.
  5. Store it in an airtight container.

Ingredients

  1. All-purpose flour – 1 cup
  2. Ground cinnamon – ½ tsp
  3. Baking soda- ½ tsp
  4. Salt – ¼ tsp
  5. Unsalted butter – ½ cup
  6. Brown sugar – ½ cup
  7. Granulated sugar – ¼ cup
  8. Egg – 1 large
  9. Vanilla – 1 Tsp
  10. Rolled oats – ½ cup
  11. Raisins – 1 cup

Method of Preparation

  1. Combine and whisk flour, cinnamon, baking soda, and salt in a bowl.
  2. In a large mixing bowl, using an electric mixer, cream together the butter, granulated sugar, brown sugar for 2 minutes until well combined. Then, add vanilla extract and egg and mix until fully combined.
  3. Now, add oats and raisins into the flour mixture. Cover the cookie dough and refrigerate for 30 minutes.
  4. Preheat the oven to350 degree Fahrenheit. Line two large baking sheets with parchment paper and set aside.
  5. Now, remove the dough from the refrigerator and scoop the cooking dough and drop onto the prepared baking sheets. Roll the dough into balls and flatten each ball with your hands gently. Make sure to leave some space between the cookies as they will spread a little while baking.
  6. Bake until it turns golden brown and remove from oven and let it cool down for 5 minutes, then transfer the cookies to an airtight jar or container.

  1. Peeled and thinly sliced potato – 2

  3. Rock salt (sendha namak) – to taste
