1. Veg French Toast Recipe

Ingredients

  1. Besan(Gram flour) – 4 tsp.
  2. Bread – 2
  3. Onion- 2 (diced)
  4. Curd- 1 tsp.
  5. Coriander leaves
  6. Butter- 1 tsp
  7. Salt- to taste

Method of Preparation

  1. In a large bowl, put besan, diced onions, curd, salt and coriander in it.
  2. Mix the ingredients carefully and put water as and when needed. The consistency of the mixture shouldn’t be too thick or too thin.
  3. Now in a non-stick pan put butter in it and after the pan heats up, take a bread dip it into the mixture and put the bread on the pan.
  4. Press and turn the bread when it’s totally cooked and golden brown.

YUM! Your veg French toast is ready.

2. Veg Mayonnaise Vegetable Sandwich

Ingredients

  1. Sandwich Bread
  2. Lots of veggies of your choice (red yellow green capsicum, onion, tomatoes, carrot)
  3. Corn
  4. Mayonnaise
  5. Tomato Sauce
  6. Green chilly sauce
  7. Butter

Method of Preparation

  1. In a bowl mix all the veggies (capsicum, carrot, onion, tomatoes) then put some corn mayonnaise, tomato ketchup and mix all the ingredients well.
  2. Now, grab a sandwich bread spread some butter and green chilly sauce on it and then spread the above mixture evenly on all the breads. Cover it with another slice of bread.

3. Lemon Rice

This delicious lemon rice recipe is easy to make and healthy too. While travelling, it’d help you to restore your energy that you loose while travelling.

Ingredients

  1. Mustard seeds
  2. Chana dal- ½ cup
  3. Urad dal – ½ cup
  4. Peanut- 12 to 15
  5. Read chilly – 2 whole
  6. Curry leaves – 6 to 7
  7. Ginger chopped – ½ tsp
  8. Turmeric powder- ½ tsp
  9. Boiled rice
  10. Salt
  11. Lemon juice – 1 tsp

Method of Preparation

  1. Heat a pan, put mustard seeds and then put chana dal and urad dal. Saute it, for a minute. Then, put peanuts and whole red chilly.
  2. After the peanuts turn golden brown, put curry leaves and chopped ginger in it and sauté it for 20-30 seconds.
  3. Then, put turmeric powder. Mix it well and then put the boiled rice in the mixture, put salt to taste and then put 1 tsp lemon juice in it. Mix it well. Cook it for a minute.

Yummy! The lemon rice is ready to eat.

4. Banana Pancakes

Ingredients

  1. All purpose flour (maida) – 2 cup
  2. White sugar- 1 tsp
  3. Mashed Bananas- 2
  4. Vegetable oil
  5. Baking Powder – 2tsp
  6. Salt – ¼ tsp
  7. Egg -1 (beaten)
  8. Milk – 1 cup
  9. Baking powder – 2tsp

Method of Preparation

  1. Combine all purpose flour, baking powder, sugar, salt.
  2. In a separate bowl mix together egg, milk, bananas and vegetable oil. Stir the flour mixture into banana mixture.
  3. The batter should be slight lumpy.
  4. Now, heat a griddle and pour the pancake mixture onto the griddle, spread the mixture and let it cook. After it turns golden brown on the one side, turn the pancake to the other side.
  5. Keep cooking until it’s golden brown from both the sides.

NOTE: – If you want to have eggless pancakes, don’t put egg in it.

5. Bread Bhujiya / Poha Recipe

Well no, this isn’t the normal bread butter recipe. The recipe is best when you’re travelling and feel so hungry. So, to charge you up, presenting this bread bhujiya recipe.

Ingredients

Breadcrumbs – 7-8 breads
Potato- 2 (large)
Tomato – 2(small)
Onions- 4 (medium sized)
Peas – 1 cup (small)
Peanut – 1 small cup
Vegetable oil – 5 tsp
Salt – to taste

Method of Preparation

  1. In a pan, put some vegetable oil. Let it heat up.
  2. Then, put the peanuts and cook it till turns brown. Then, take out the peanuts in a separate bowl.
  3. Now, fry the onions till it turns golden brown.
  4. After the onion is cooked put tomatoes, peas and potatoes and salt into the pan. Now cover the lid and let it cook for 5-10 minutes.
  5. After everything is cooked put the peanuts in it and the breadcrumbs. Mix it well.

The bread bhijuya is ready!!

Note- you could put vegetables of your choice. But, it tastes best with potato tomato peas and onions only.

  1. Nachos- which is easily available in any supermarket.
  2. Diced onions
  3. Diced tomatoes
  4. Green chilly
  5. Jalapeno
  6. Coriander
  7. Red chilly powder

  1. In a bowl, mix all the ingredients well.

Ingredients

  1. Besan(gram flour) – 1 cup
  2. Onion- finely chopped
  3. Tomato – ¼ cup
  4. Coriander leaves
  5. Green chilly
  6. Cumin seeds – A pinch
  7. Turmeric powder – 1 tsp
  8. Red chilly powder –
  9. Water – As needed to maintain the consistency perfect.
  10. Salt
  11. Oil – 2-3 tsp

Method of Preparation

  1. In a bowl, mix besan and all the ingredients with a spoon. Then, add water as required. With the help of a whisk begin to mix everything. Add water if the mixture is too thick.
  2. Mix to a smooth flowing consistency in the batter. Break the lumps if any while mixing batter.
  3. Now, heat a griddle ( non stick flat pan) then take a scoop full of the gram flour mixture and pour it on the griddle. Now, gently begin to spread the mixture so that it doesn’t break.
  4. Continue to cook till the base gets light golden. Now flip, the cheela and cook it till you see the golden spots on it. Fold and serve them hot with any chutney of your choice.
