Mushroom & Potato Gratin – Recipe

Time:  1 hour | Servers: 4-6

• 400 gms potatoes
• 3 tbsp olive oil
• 1 bay leaf
• 200 gms mushrooms, sliced thick
• Butter for greasing
• 200 ml double cream
• 100 ml milk
• 10 garlic cloves, chopped
• 1/2 tsp salt
• 50 gms grated Cheddar cheese

• Boil the potatoes in salted water, till cooked but firm. Peel and cut into thick slices.
• Put the olive oil in a pan on medium heat. When hot, add the bay leaf.
• Add the mushrooms in small batches and stir-fry, till all the moisture has bubbled off and they are crisp and golden at the edges.
• Layer the potatoes in a buttered baking dish with the mushrooms.
• Combine the cream, milk, garlic and salt in a bowl and pour it over the layered potatoes and mushrooms.
• Sprinkle the cheese on top and bake in an oven preheated to 180°C for 30-40 minutes, till the top is golden.
